Next come delicately flavoured first courses with handmade filled pasta, and the traditional sauces of this land, at their best with classic tagliatelle.
In the most traditional Tuscan cooking the famous Florentine T-bone steak is never missing, along with other tasty meat main courses, such as sirloin breaded with aged cheese and the various sliced beef tagliata.
The side dishes typical of the local tradition, such as roast potatoes, chickpeas tossed in good olive oil and zucchini, are not secondary dishes but the natural companions to the meats selected by the chef.
